Pumpkin Pie

15 oz. can of pumpkin

1 tsp. cinnamon

1/4 tsp. ginger

10 oz. full-fat coconut milk or 10 oz. heavy whipping cream

3 oz. maple syrup

2 eggs slightly beaten

1 pre-made pie crust


Combine all ingredients in a bowl and stir.  Let sit for 10 minutes to allow the spices to blend.  Stir again and pour into a pie crust.

Bake at 425 degrees for 15 minutes.  Remove from oven and cover the crusts with strips of aluminum foil.  Return to oven and reduce heat to 350 degrees and cook for 50 more minutes or until fully firm and brown,
